  • 1 tbsp Key Lime Peel optional
  • green food coloring optional

For the Key Lime Pie Topping

  • 2 8 oz packages of cream cheese
  • 4 cups confectioners sugar
  • 1/4 cup lime juice
  • green food coloring optional
  • 3 cups cool whip

For the Cake Bar Layer

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, add the white cake mix, egg, butter, lime juice and lime peel.
  • Add a bit of green food coloring and mix for a couple minutes.
  • Pour into a greased 13 x 9 inch pan and bake at 350 for approximately 20 minutes. Start checking for doneness at 15 minutes. Don't overbake, you want them to remain chewy.

For the Key Lime Pie Topping

  • Add the cream cheese to a mixing bowl and cream until smooth.
  • Add confectioners sugar, key lime juice and a bit of green food coloring. Mix well.
  • Add cool whip and mix on medium low until mixed in.
  • Spread topping over cooled or chilled cake. Cover and chill in the fridge for about an hour. Cut and serve.

Keep this cake chilled.
