So, I have one question for you. Have you ever bought a pie and eaten the whole thing yourself? Well I have. Yeah that’s really bad, right? So the pie that I can’t stop eating would be the key lime pie. It’s like crack…I just can’t stop. (Not that I do crack or anything…just wanted to clear that up.) Anyway, I NEEDED to create a cake version of it, so the Key Lime Pie Cake Bar was born.
The bottom layer of this cake is chewy and yummy and full of key lime flavor. It’s made using a white cake mix, so it’s easy and comes together quickly.
The topping on this cake is just like the filling in a key-lime pie and oh my goodness, you won’t be able to stop eating it. I know, I couldn’t. The creaminess of this topping goes perfectly with the chewy goodness of the cake layer. Seriously, you might not want to share this.

Key Lime Pie Cake Bars
Ingredients
For the Cake Bar Layer
- 1 White Cake Mix
- 1 Egg
- ½ cup Butter (1 stick) room temp
- ½ cup Key Lime Juice
- 1 tablespoon Key Lime Peel optional
- green food coloring optional
For the Key Lime Pie Topping
- 2 8 oz packages of cream cheese
- 4 cups confectioners sugar
- ¼ cup lime juice
- green food coloring optional
- 3 cups cool whip

Instructions
For the Cake Bar Layer
- Preheat the oven to 350 degrees.
- In a mixing bowl, add the white cake mix, egg, butter, lime juice and lime peel.
- Add a bit of green food coloring and mix for a couple minutes.
- Pour into a greased 13 x 9 inch pan and bake at 350 for approximately 20 minutes. Start checking for doneness at 15 minutes. Don’t overbake, you want them to remain chewy.
- Let cool completely. You can chill it covered in the fridge while you make the topping.
For the Key Lime Pie Topping
- Add the cream cheese to a mixing bowl and cream until smooth.
- Add confectioners sugar, key lime juice and a bit of green food coloring. Mix well.
- Add cool whip and mix on medium low until mixed in.
- Spread topping over cooled or chilled cake. Cover and chill in the fridge for about an hour. Cut and serve.
