Ok, I’m not a huge pie baker. Shocker, I know. I love pie, I just don’t bake a whole bunch of them. I’m more of a cake person (that’s not really a surprise).Anyway, I usually just go and buy a pie when I’m having a craving.

Key Lime Pie Cake Bars

So, I have one question for you. Have you ever bought a pie and eaten the whole thing yourself? Well I have. Yeah that’s really bad, right? So the pie that I can’t stop eating would be the key lime pie. It’s like crack…I just can’t stop. (Not that I do crack or anything…just wanted to clear that up.) Anyway, I NEEDED to create a cake version of it, so the Key Lime Pie Cake Bar was born.

The bottom layer of this cake is chewy and yummy and full of key lime flavor. It’s made using a white cake mix, so it’s easy and comes together quickly.

The topping on this cake is just like the filling in a key-lime pie and oh my goodness, you won’t be able to stop eating it. I know, I couldn’t. The creaminess of this topping goes perfectly with the chewy goodness of the cake layer. Seriously, you might not want to share this.
